Coffee club
What is butternut coffee? I purchased some Maryland Club Butter-nut coffee expecting it to be flavored.?

The coffee doesn’t have any “flavored” aroma like hazelnut or french vanilla. I bought it because it was inexpensive. Just curious, have not found any relevant info searching online

Butter-Nut is an old coffee brand. As I remember it came out Minneapolis/St. Paul. It dominated the market in the midwest because it was so cheap. I always tho’t it tasted burnt. You could make a 30 cup percolator of it, let it stay hot all day on the back of the wood cook stove, and it didn’t taste any worse at night than it did in the morning.

The brand name is now owned by Folgers, as is Maryland Club. I think it is their inexpensive restaurant blend.

Instant coffee
Can I use instant coffee instead of coffee extract in a coffee cake?

I have a dilemma because the recipe says to use coffee extract, but I’ve looked in the supermarket and they don’t sell it. So, can I use instant coffee instead?

Or, do you know of a recipe that doesn’t use coffee extract?

I’d use a couple tsp of instant coffee granules, or abotu 3 Tbsp of cooled brewed coffee. I have never seen coffee extract, and would never buy it if I did!

Roasted coffee beans
What are some brands of authentic, dark roasted strong coffee beans. Something that can be ordered?

I’m looking for some high quality, strong, dark roasted coffee beans from outside the U.S. Preferably Nicaraguan, but as long it’s the good stuff. NOT Kopi. Any Brand suggestions?

*No “Google it / search it” answers.

If you want something really strong, try looking for some French Roast. Its pretty much as dark as you can get. Most major coffee companies carry some kind of french roast.

Kona coffees are usually dark roasted, but not always. While its technically part of the US, its really an island in the middle of the pacific. They usually have a pretty strong, yet smooth flavor. If you want dark though, make sure its a dark roast Kona.

You can also try looking for some peaberry coffees. Peaberries are rare and occur when the coffee cherries grow in ones instead of twos. They usually have a really robust and full flavor.

As for brands, Illy is a really great European brand. Caribou is a US company that imports a lot from central and south america. Peet’s is also pretty good.
